Pernod, an aniseed liqueur, was largely born as a reaction to the banning of the ever-popular, possibly psychedelic, absinthe in the early 20th century.  A perfect aperitivo option- perhaps in a “Death in the Afternoon”?  1 oz Pernod, 5 oz Champagne (substitute Champagne for a cremant d’anything for the same magical effect).  How romantic.
